Lent is here (and almost over).  Being Catholic, I practice the fast/abstinence-from-meat thing on Fridays during this time.  I love seafood anyway so it’s not a very difficult thing for me.  These are two of my favorite healthy low carb-lunches – the first since I’ve discovered multigrain bread (altho I don’t eat a lot of bread, I usually buy whole wheat) – and the second since I discovered tempeh.

For the sandwich, I mixed up a simple tuna salad (tuna, mayo, chopped celery, chopped onion, salt & pepper), spread grey poupon mustard on one slice and added sliced avocados, lettuce and alfalfa sprouts.  Yum!  I feel so healthy when I eat this.  Is your mouth watering yet?  lol

The other meal is simple, plain and VERY healthy!  Here I have flaxseed tempeh, lettuce and avocado.  I sprinkle soy sauce or Bragg’s soy protein on the tempeh to give it a little flavor.
