I was going thru my photos and getting ideas of what I could post about.  I found this photo of my last vegetable garden harvest from December which must have gotten lost in the holiday shuffle.  So I’m calling it my last empty nester harvest. We had a variety of sweet potatoes this year – some from past years which my husband had kept to grow again and some new ones.  Sweet potatoes as you may know are very healthy and nutritious and I personally don’t need to season it when I eat it.  I made some candied sweet potatoes for Thankxgiving and Christmas potlucks, used them in a pot roast (that was out of this world delicious!) and I just bake them whole, as chips or french fries.  last empty nester harvest The carrots weren’t so abundant and we only got about 7 total 🙁  But they were very healthy tasting – unlike the ones I’ve bought from the grocery stores.  I used them in the pot roast and cut them into chunks for steaming.  I love homegrown vegetables and look forward to this year’s vegetable gardens.  Hopefully we’ll be able to plant the yummy stuff like kale, spinach, peppers, a variety of peas and beans, brussels sprouts, tomatoes, broccoli and cauliflower. We’ve had issues with bugs that ate the squash vines so I’m not sure cucumbers, zucchini and other squashes will be in our garden future.

I would love to have flower gardens but that’s fodder for another post 🙂

    I love fresh veggies! Have you looked into a local co-op or local/organic delivery service? We found one near us that was as cheap as the stores, but with great taste!

      I live in a rural area of a small town and hadn’t thought of that, Adam. But I’ll check into it. I might get lucky! Thankx for the suggestion and for stopping by 🙂
