My homemade taco is the best in the world – really. At least Mister and I think so 🙂
I had my first taco when I was 17 and had moved from Maui to Washington to go to college. I had never seen one before (I don’t think they existed on Maui back then; nor did pizza by the way). I immediately liked it and have ever since. When we go out to Mexican dinner, that is what I usually order and every restaurant is different. I’ve had a few bad ones and lots of good ones and a couple really really good ones. When I make them at home I combine the ingredients that I like from my various experiences to make the best ones in the world 😀 I used to season my meat with the seasoning envelopes that I bought at the store, but over the last few years, I have been making it from scratch using a recipe I found online. 99.9% of the time I use ground pork but have used ground beef (hamburger) and ground turkey also. I prefer corn to flour shells, spinach or kale to lettuce and crumbled cheese to the Mexican mix. They are doubly good when paired with my homemade salsa. *licking my lips* If we have that on hand, I don’t even bother to cut up tomatoes!
So here is the mixture that I put in a pound of cooked ground pork and simmer till the liquid is gone –
1 T dried onions
2 t chili powder
1 t sea salt
1 t garlic powder
1 t cornstarch
1 t cumin
1/2 t cayenne pepper
3/4 cup water
I use white corn tortillas and barely brown both sides in a little olive oil, lay it on a paper towel, sprinkle a little salt on one side (which is the outside) then fold over.
I admit I always eat one too many when I make these for supper lol
