How often do we read suggestions to eat lean meat? Pretty often I’d say. One of the leanest, therefore healthiest meat I know of that I am fortunate enough to be able to incorporate into our healthy lifestyle is rabbit. No, not the wild stuff you see in cowboy movies or cartoons lol but I’m talking about the domestic kind. My husband raises them and I get the privilege to cook them up for our consumption. So today I’d like to tell you one of the ways I fix a rabbit dish – stir fry rabbit & cabbage. First off, I use rabbit meat as a substitute for chicken, pork or beef dishes so you can take your favorite meat dish and use rabbit and it should be just as tasty (or better!)
For this dish, I used the meat I had taken off the bone after boiling it. (We had fileted the rabbit and boiled what was left) So I sliced some cabbage and white onion and sauteed them in a bit of olive oil. When that was almost as soft as I like it, I added the cooked rabbit meat, seasoned with garlic powder, salt and pepper and stirred it up till the meat was well heated. Yummy!
