I’m really trying to be grateful this Thankful Thursday as I stress at the wintry weather we are having. The temps do NOT make me happy and neither do the icy forecasts.
1. Not much has happened since my last Thankful Thursday post. I have only made it to half way being ready for Christmas. But again, I have big intentions for the coming weekend when I’ll have some days off to catch up! #goalsetting
2. We’ve received news of family and friends’ deaths and our 96 year old aunt fell at home and broke a bone so she’s in the hospital for now. Not exactly highlights of my week, but it’s my life.
3. Traveler Tidbit of the week: I’ve had several requests this week from travelers that make me wonder if the signage outside should read “Convenience Center”. I’ve had people ask me for ATM machines, phone charger station, microwave, stamps and showers. Mmmmm…don’t they know my job is to welcome them to Iowa??? #apparentlytheydidnt
On the Fitness and Nutrition Front
Country Heat is still my choice of workouts. There’s a short dance routine on one of the dvds that I’m learning and it’s pretty fun to do.
I had some leftover cooked ground pork that I used in another dish so I scrambled it with some eggs. Then I stir fried some bok choy, sweet peppers, green peppers, clove of garlic and onion, put them together and threw in leftover vegetable quinoa. Voila! Another delicious all-in-one meal aka stir fry!

Yea, cold is not fun, unless I’m at a winter resort! Not as cold as you are, here in Virginia but still miss warmth.
I’ve only been to a winter resort a couple times in my life and when you’re having fun skiing and such it’s not as cold. But when you have to get up and leave a warm house to go to work…well, that’s another story lol Merry Christmas Emily 🙂
