Ok, which of you empty nesters like pie? C’mon, don’t be shy to admit it. Even if you aren’t an empty nester, I bet you like pie! They are one of the easiest things to bake and the easiest to disappear around our house! That’s why I don’t bake it very often. Mister is the master baker 🙂
Before this one famous (around these parts) family restaurant closed down, we discovered a pie they made that was soooo good – so good they weren’t sharing the recipe. 🙁 So I looked it up online to see if I could find one and see how close it would be to what we ate at the restaurant. I found a few and we tested them out. I am sharing the one that Mister makes the most often and seems to be the favorite at our family potlucks. It is called Amish Oatmeal Pie and is pretty healthy (altho I don’t have the nutritional value for it).
First the ingredients –
1 1/2 cups milk
3 eggs, lightly beaten
3 T butter or margarine, melted
2/3 cup rolled oats
1 1/3 cup dark brown sugar
2/3 cup flaked coconut plus additional for topping
1 9 or 10 inch, deep pie shell, unbaked
Note: We use butter, not margarine and light brown sugar, not dark.
Here are the easy peasy directions –
Preheat oven to 425 degrees Fahrenheit. Combine milk, eggs, oats, butter, brown sugar and coconut in a large bowl. Mix thoroughly with a wire whisk. Pour into pie shell and sprinkle with additional coconut. Bake for 10 minutes. Reduce heat to 350 degrees and bake for additional 30 minutes or until a knife inserted in the center comes out clean. Good warm or chilled.
Sometimes we have vanilla ice cream with it and other times, cool whip.
