This is the season for zucchini squash, a very healthy vegetable that we have growing in our garden and love to eat.  I’ve been doing a ‘garden workout’ I simply call “harvesting” 🙂 over the last week or so and we have been enjoying the healthful benefits of this summer squash.  Today I am posting my favorite way to fix this awesome vegetable.  I call it Cheesy Zucchini.  It is quick and easy to make.  First you slice the zucchini in quarter inch circles.  Spray your cookie sheet with olive oil and place the circles on the pan.  Sprinkle the circles with grated cheese and bake @ 375 to 400 degrees for 13 to 15 minutes.  All that’s left to do then is enjoy this scrumptious cheesy zucchini side dish 🙂

      Have at it, Michael! I don’t think you’ll regret it 🙂 I know I don’t get tired of this dish at all!!! And Steve, I agree, it’s one of the healthiest vegetables around 🙂
